We generally know what fish will be available for
you for the date of your event, although the market
changes a lot. If any changes need to be made you
will be contacted, but all of these fish are magnificent.
Marinated in a Simple Lime & Herb bath, then
Grilled in our mascot grill, “Smokey McSmokerson”.
We use hard wood charcoal and a small amount
of fruit or hickory wood to finish the fish’s flavor.
Served on a Large Carving board a feast for the eyes
as well as the belly.
